30th December 2011 …… Black Eye Bean Burgers

Spree a great food photographer and imaginative cook posted a real good recipe for Black Eye Beans for Smoking Hot Joe ……which reminded me of my own alternative and very simple use of the the baby sweet beans, here it is:


Large Tin of Black Eye Beans appx 450gm drained well
2 tsp ginger garlic paste
1 green chilli chopped
1 small red onion finely chopped
4 x tbsp of freshly chopped mixed herbs (I use parsley, chives, mint, oregano .. whatever you have, don’t be mean!)
A slug of tamari sauce
Fresh breadcumbs to mix and some extra for coating
A beaten egg
salt & pepper

Mash the beans well with a fork

Add the rest of ingredients to a stiff mixture only using only half the beaten egg

Divide and make into burger size to suit not too large

Dip the burgers into rest of beaten egg and roll in rest of breadcrumbs

Chill in fridge until ready for frying in griddle pan for appx 10 mins each side

Can be served hot or cold as nibbles with a salsa with salad or in a bun

These can be made ahead of time easily… enjoy 

  1. I love the sounds of this Lesley! They’ll soon be making an appearance on our table! Now “ginger garlic” paste is something I’m not unfamiliar with so I’ll just add some fresh grated ginger and minced garlic to taste, but I’ll be very careful to measure precisely that slug of tamari!     1. You can get jars of Ginger & Garlic paste in Asian stores but maybe they are thin on the ground in your neck of the woods! You can chop them up as you say and even pestle & mortar them. I often do if I am out of the jars. Hope you enjoy them HAPPY NEW YEAR TOO 🙂 !
